ci(e2e): pin the local auth/database providers for the e2e stack
The frontend production build requires NEXT_PUBLIC_MIKE_AUTH_PROVIDER for local-profile builds, and explicit MIKE_DATABASE_PROVIDER / MIKE_AUTH_PROVIDER remove the reliance on env auto-detection.
