WS7: rename Projects to Matters in user-facing copy
String-only rename of the workspace concept across all user-facing
strings: sidebar nav, headings, breadcrumbs, modals, empty states,
filter/column labels, aria-labels, toasts, privacy-data dialogs, and
backend error details ("Matter not found", share/target phrasing).
99 strings across 27 files.
Deliberately unchanged (hard rule 8 / accepted owner trade-off):
identifiers, /projects route paths, DB names, log tags, comments,
LLM-internal prompt text, and the "Project Finance" practice area.
Terminology decision logged as R10 in docs/LEGAL_LANGUAGE_REVIEW.md
for solicitor sign-off; BUILD_LOG entry added.
